Not a Fad: Chef Brian Polcyn Schools a New Generation in the Art of Charcuterie

The master chef will bring his knowledge to Eastern Market this weekend.

Chef Brian Polcyn has trained under the masters of charcuterie in Europe and written numerous books on the craft.

You may know his name from his more than forty years experience at the helm of Metro Detroit establishments like Forest Grill and Five Lakes Grill. 

This weekend in Eastern Market, Chef Polcyn will teach a new generation of culinary students about the art of charcuterie.
